When it comes to carbs, I feel as though I could be the queen. I always add crackers to soup, I love eating sandwiches with thick slices of bread, I can’t start my day without a heaping bowl of cereal and I could probably eat pasta every day of the week…with garlic bread on the side, of course.
Another item I almost always serve with dinner are either rolls or a French baguette. Serving dinner with a bowl of delicious homemade rolls on the table adds a nice touch to any meal…and that’s exactly what I did yesterday.
We had the cutest and sweetest couple over for dinner last night and I really wanted to make something extra special. Included in my swag bag from the Big Summer Potluck was Pam Anderson’s new cookbook, Perfect One-Dish Dinners: All You Need for Easy Get-Togethers. I swear, this book is absolutely amazing. It truly is all you need for easy get-togethers because it provides main entree recipes, along with appetizers, salads, desserts and wines that perfectly complement the main dish.
Every night for the past week I’ve pulled out that book and flipped through the pages for dinner ideas for our dinner party and each time I did that I kept stopping at the recipe for Coq au Vin Blanc. The photo was so beautiful and the dish looked absolutely delicious. After hearing rave reviews on the dish from other BSPers who prepared the recipe since receiving the book, I knew I had to make this for our dinner guests.
To accompany the main entree, I also prepared these Cheddar and Parsley Biscuits, a goat cheese and beet salad and a delicious dessert to finish off the wonderful evening spent with great friends.
Cheddar and Parsley Biscuits
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/3 cup cold butter
- 1 cup shredded Cheddar cheese
- 2/3 cup milk
- 1 egg
- 1/2 teaspoon garlic powder
- 2 teaspoons dried parsley
- 1/2 teaspoon garlic salt
- 2 tablespoons butter, melted
Directions:
- Preheat oven to 400 degrees; line baking sheet with parchment paper or grease a baking sheet.
- Combine flour, baking powder and salt in a large bowl.
- Cut cold butter into the flour mixture.
- Add cheese, milk, egg, garlic powder, parsley and garlic salt and mix until combined.
- Use an ice cream scooper to scoop balls of dough and place them on the prepared baking sheet.
- Place in the oven and bake for 10 minutes. Brush melted butter over the biscuits and continue to bake for an additional 5 minutes.
- Remove from the oven and serve warm.

These biscuits were SO delicious!! I was one half of the 'sweetest couple' that came over to Jen's house for dinner last night and I felt like my hands were always reaching into the cheddar cheese biscuit bowl. :) I used mine to soak up the last bit of Coq au Vin Blanc sauce left in my bowl too. The entire menu that Jen put together was amazing. Jen also made an appetizer consisting of olives/cheese on phyllo dough baked until crispy and bubbly. I am not a huge fan of olives; however, I devoured 3 before my boyfriend even had 1 (and he is the olive lover).
After the meal, Jen sent us home with our bellies full of probably the best ice cream that I've ever had. It was simple vanilla ice cream topped with warm caramel sauce, sugared pecans and cinnamon crisps. We all devoured it in silence.
