The other night I had a severe craving for some healthy greens mixed in with some fresh veggies. Now, I know that the weather has been very chilly lately so you’re probably thinking that serving a salad for dinner was probably a bit unusual. Think again! This recipe included a nice combination of fresh ingredients that was a great dinner in cold weather. It also tastes delicious in warm weather too!
Lemon-Parmesan Dressing
Ingredients:
- 1/3 cup grated Parmesan cheese
- 5 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon finely grated lemon peel
Directions:
- Whisk together all ingredients in a bowl. Season with salt and pepper. Cover and chill until the salad is ready to serve.

A couple of lovely ladies who I work with started a salad club and it’s so cute to see them work as a team preparing their lunches (I can often be found devouring leftovers from the previous night’s dinner). One day, they offered to make me a salad and I swear, my salads have never been the same. They included such fun and easy ingredients that made for a perfect salad. And the big bonus was that they turned me on to turkey bacon. There, I said. Yes, I love turkey bacon now.
Every once in a while, I find myself craving this salad for dinner. My husband and I always end up devouring every last morsel. It’s super tasty, easy to prepare and very inexpensive.
Here are the salad fixings for a refreshing salad that I know you will enjoy:
- Baby Romaine lettuce
- Cherry tomatoes
- Turkey bacon, crumbled
- Garbanzo beans
- Cucumber
- Goat Cheese, crumbled
- Mushrooms
- Croutons
Combine all of the ingredients (quantities are to your liking) into a large bowl, toss with the Lemon-Parmesan Salad Dressing and scoop into individual bowls.
