Coffee Chocolate Cupcakes

Ingredients:

  • 3/4 cup butter
  • 3 eggs
  • 1 3/4 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup strong brewed coffee, cooled
  • 2 cups sugar
  • 2 teaspoons vanilla
  • Chocolate frosting

Directions:

  1. Allow the butter and eggs to stand at room temperature for 30 minutes. Grease and flour muffin cups, or line with paper bake cups. Preheat oven to 350 degrees.
  2. Mix together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Combine milk and coffee in a 2-cup measuring glass.
  4. Beat the butter with an electric mixer for 30 seconds and then gradually add sugar and continue to mix. Add eggs, one at a time, and beat well after each addition. Mix in the vanilla.
  5. Alternate between the flour and milk mixture and add these two mixtures to the butter mixture. Beat well between each addition.
  6. Spoon batter into muffin cups, filling each 3/4 full.
  7. Bake approximately 18 minutes or until the tops of the cupcakes spring back.
  8. Cool cupcakes in muffin tin on wire rack for 5 minutes and then remove from the muffin tin and cool completely.
  9. Top the cupcakes with frosting.

  1. You have a lucky husband! :) Those cupcakes look amazing. My hubby's birthday is actually this weekend, and we're having a small dinner party at our house. He opted for cheesecake as his "birthday cake" this year… I didn't argue! :)

  2. I found your blog through pinterest- and oddly enough not even for this recipe. But! I made these today and they are FANTASTIC! I love that you can really taste the coffee. I find that most baked goods that mix chocolate and coffee usually just end up tasting like dark chocolate- BUT these are fantastic for any coffee love. Cheers! I hope he had a wonderful birthday with many more to come.

  4. I did this recipe with a twist for Christmas. I had some powderized candy cane from a previous baking experiment gone wrong, so instead of using 2 cups sugar, I used 1c sugar and 1c candy cane. It seemed to come out with just a hint of mint. Next time I'm going to try swapping out 1 1/2c :) topped with whatever comes to mind!
