When it comes to dinnertime, as you can imagine, I’m all about simple meals that are easy to put together and leave us feeling full and satisfied. A few months or so ago, we were talking to our neighbor who is really into fitness and healthy living. She mentioned that her and her husband changed up their dinners and started eating a lot of chicken and vegetables. Since my husband is training for a marathon, we immediately became intrigued.
We started to buy large packages of chicken every weekend that we placed in a baking dish filled with marinade. Throughout the week, we would take out a few pieces of chicken and place them on the grill. Next, we opened a can of beans, drained and rinsed them, placed them in a pot, and sprinkled them with creole seasoning as we warmed them. We either wrapped corn in aluminum foil and grilled the corn packets or roasted vegetables in the oven.
After a few weeks went by of eating chicken, beans, and vegetables for dinner, we started to notice a big change in the way we felt. We didn’t feel overly stuffed, our bodies would start to tell us when we were hungry for the next meal, and we felt more energized. This “clean” way of eating made dinnertime simple since we always knew what we were going to eat. Plus, we didn’t have to go shopping as often and the food that we were eating didn’t cost a lot of money every week.
After a few months went by, we were hooked and we still eat this way. If you show up at my house, you’re bound to find a refrigerator that is full of vegetables ready to be roasted and chicken that’s ready to be grilled. Open up our pantry and you’ll find countless cans of beans. From pinto beans to kidney beans, black beans to great northern beans, having a variety of canned beans in our pantry help us change up the menu every night.

By keeping a supply of chicken, vegetables, and canned beans, I feel like the recipe possibilities are endless.
Canned beans are convenient and are a simple way to make great tasting-meals and side dishes. Having canned beans in my pantry allowed me to be creative with my cooking as I prepared burrito bowls for my family. - 1 cup white rice
- 2 cups water
- 1 lime
- Garlic salt (to taste)
- ¼ cup finely chopped cilantro
- 1 can of corn, drained
- 1 can of Luck’s Black Beans, drained and rinsed
- 1 tomato, chopped
- 1 cup chopped iceberg lettuce
- 2 grilled chicken breasts (make sure the meat is either seasoned with salt and pepper before grilling or placed in marinade before grilling)
- 2 tablespoons of guacamole
- Pour the rice and water in a medium pot, bring to a simmer, cover and cook for 15-20 minutes or until the water is absorbed and the rice is cooked
- Squeeze the juice from one lime into the rice. Season the rice with garlic salt (to taste). Use a fork to fluff the rice while adding in the chopped cilantro.
- Place the rice in one portion of the bowl. Next, fill the rest of the bowl, in portions, with the following ingredients: corn, black beans, tomato, lettuce, and chicken.
- Top each bowl with a tablespoon of guacamole and a lime wedge.
